The life of a restaurateur

A restaurateur must be a diplomat, a democrat, an autocrat, an acrobat, and a doormat. He must have the facility to entertain prime ministers, princes of industry, pickpockets, gamblers, bookmakers, pirates, philanthropists, posies, and prudes. He must be on both sides of the "political fence" and be able to jump the fence.

He should be, or have been a footballer, golfer, bowler, tennis player, cricketer, dart player,
sailor, pigeon fancier, motor racer and linguist as well as have a good knowledge of any other sport involving dice, cards, horse racing, and billiards. This is also most useful, as he has to sometimes settle arguments and squabbles. He must be a qualified boxer, wrestler, weight lifter, sprinter, and peacemaker.

He must always look immaculate when drinking with the ladies and gentlemen mentioned in the first paragraphs, as well as bankers, swankers, theratricals, commercial travelers, and company representatives even though he has just made peace between any of the two, four, six, or more of the fore mentioned patrons.

To be successful he must keep the bar full, the house full, the storeroom full, the wine cellar full, the customers full and not get full himself. He must have staff who are clean, honest, quick workers, quick thinkers, non-drinkers, mathematicians, technicians, and at all times to be on the boss' side, the customers side and stay on the outside of the bar.

To sum it up: he must be outside, inside, offside, glorified, santified, crucified, stupefied, cross-eyed and if he's not the strong silent type there's always suicide!!!

To Our VIRGINIA TECH Graduates

So on this Saturday in May
as you graduate and say "Now what do we do?"

Whether a four year, a six, or even an eight,
your memories at Tech will always be great.

And in cap and gown you will make quite a show
as you pray the "real you" your parents never know.

But here at Big Al's, Poor Billy's, and Poor Billy's too
we know 'cause we've seen that "best side" of you!

As you wake in the morning to see where you are
and look for the credit card you left at our bar.

It could have been worse, to get escorted out
while "just one more drink" you continue to shout.

And the memories you'll keep of night after night
it was eat, drink, party, and sometimes a fight.

But enjoy your moment, be the best you can make
and give Mom and Dad's wallet a much-needed break.

so we wrote this to say just how much we thank you!
